Food Waste Reduction Event

On July 11, 2018 Astrapto, in partnership with Plisko Sustainable Solutions, held an industry event on food waste reduction in the hospitality industry. Learn more about this event and the exhibiting vendors.

World Wildlife Fund

In 2018, Astrapto led the Baltimore expansion project for WWF’s Hotel-Kitchen food waste reduction program. This work included an assessment of the food waste reduction and recovery landscape of Baltimore and stakeholder engagement with representatives from government, non-profits and food recovery systems, waste management, and the hospitality sector. In 2019, Astrapto conducted this same work to expand WWF’s program to the Dallas-Ft. Worth area.

Centerplate Food Waste Reduction

Astrapto has worked with Centerplate in 3 of their convention center locations to train staff on food waste reduction strategies, set goals for food waste reduction and diversion, prepare food waste audit templates and protocols, set up new food recovery initiatives, and generate reports to show results. Results have included:

  • An 83% increase in food donations to people and 73% reduction in food to landfill in Baltimore.

  • Compost rates doubled immediately following training and assistance with process improvements.

  • Regular food waste audits that reveal data intelligence that can be used to improve menu design, production sheets, and service strategies.

  • New community service partners in each location.

  • Over 150 staff and managers trained on food waste awareness.

Baltimore Convention Center

Astrapto offered the Baltimore Convention Center a Materials Waste Reduction workshop to help all departments - sales, planners, and operations - work through the flow of materials through their building and establish better waste management practices and client communication to reduce waste.

Events Industry Council

In addition to Aurora’s volunteer work on EIC’s Sustainable Event Standards taskforce in 2017 and 2018, she is one of EIC’s contract instructors for the Sustainable Event Professional Certificate. Aurora has delivered the SEPC at Sustainable Brands in Detroit, Hosts Global Forum in Dominican Republic, and to in-house corporate groups. Astrapto performed an organizational assessment and recommended sustainability initiatives to engage employees and orient the staff towards a culture of sustainability awareness and action. Astrapto also supported Pearlstone’s marketing team by presenting the state of green meetings and recommended approaches to reach and attract meeting planners with sustainability features and messaging.
