Astrapto Announces Food Recovery Workshop at the Baltimore Convention Center


Milestone event to take place Wednesday, July 11th

Baltimore, Md. (June 18, 2018) – On Wednesday, July 11th from 1pm to 5pm ET, the Baltimore Convention Center will host a valuable workshop to expose the greater Baltimore hospitality community to food waste reduction strategies, technologies, and services. Attendees will learn strategies for food conservation, hear lessons learned, and speak with vendors who offer products and services to help hospitality businesses with food waste reduction.

Food waste has become a hot topic capturing the attention of decision makers across a broad spectrum of organizations, businesses, media, and governments. Food waste is a social problem because 23% of Baltimoreans lack access to affordable food. It’s an environmental issue because it contributes to climate change. And it is an economic opportunity because food waste impacts the bottom line.

This workshop is part of a broader initiative being implemented by Astrapto for the Baltimore Convention Center and their catering partner, Centerplate. The program encompasses:  

  • Training of onsite management and staff to be more knowledgeable about food waste efforts
  • Regular food waste audits and establishment of food waste measurement and tracking protocols
  • Creation of a food donation policy to increase donations for feeding the hungry
  • Repurposing ‘waste’ into innovative new employee lunch menus
  • The piloting of a food scraps donation program to benefit a nearby pig farm
  • Experimenting with the latest composting and diversion technologies

Aurora Dawn Reinke, Astrapto’s founder and the Baltimore project leader, stated, “We felt these key stakeholders – the Baltimore Convention Center and Centerplate – would be vital to changing the culture of food waste management in the local community. As those who are often the first to interact with visitors and meeting planners, they can set the tone for best-in-class sustainability in Baltimore hospitality.”

In 2017, World Wildlife Fund, supported by the Rockefeller Foundation, partnered with the American Hotel & Lodging Association to study food waste reduction best practices in ten hotels. In November 2017, they released free resources, checklists, and training videos for the hotel industry.

In 2018, WWF selected Baltimore to expand its HOTEL|KITCHEN program and to explore place-based dynamics in promoting food conservation. They chose Astrapto LLC and Plisko Sustainable Solutions, LLC – both Maryland-based, women-owned businesses – as the local project team. Astrapto approached Visit Baltimore, the Baltimore Convention Center, and their catering partner, Centerplate, to pilot and implement strategies for food recovery and waste diversion.

Exhibiting vendors for the July 11th event include ORCA Technology, BioHiTech Global, LeanPath, Waste Neutral, Maryland Environmental Service, ReGreen Organics, Cureate Connect, Reduction In Motion, Filta Environmental Kitchen Solutions, MEANS Database, FoodBridge, and Maryland Food Bank.
